Nepali Recipes
Aalu Achar (with Mula)
Ingredients
- 500 gms potatoes, boiled, peeled and cut into cubes
- 250 gms Raddish / carrots cut into thick stripes ( add 1 tsp salt and a pinch of turmeric, mix well and keep aside for 10 mins, drain )
- 25 gms small dry peas ( soaked overnight) OR fresh shelled peas
- 1/4 tsp Turmeric powder
- 1/4 tsp cumin powder
- 1/2 tbsp Chilly powder
- 5 tbsp Sesame powder ( Roast sesame in a dry pan and grind it for powder)
- 1 tbsp fresh lemon juice
- 1/2 cup water
- 1/2 cup chopped fresh coriander
- 3 tbsp Oil
- 1/2 tsp fenugreek seeds
Instructions
Take a bowl. Put potatoes, raddish/carrots ( drained ),peas, salt,turmeric cumin, chilly, sesame powder,lemon juice, fresh chopped coriander and marinate well adding water slowly. Marinate very well till the achaar is gravy. Heat a small pan, add oil and heat, when hot, add fenugreek till it turns black. Pour over the achaar. Make this 30 mins before eating. Serve cold. Option: green chillies cut into long stripes can be added with the fenugreek for hot taste.
