Nepali Recipes

Chili Achaar

Ingredients

  • 1 1/2 cups fresh red thai chilies
  • 1/2 cup fresh green thai chilies
  • 1/2 cup cilantro
  • 1/2 cup mint leaves
  • 4 cloves garlic, sliced
  • 1 in. ginger, minced
  • 2 tablespoons sesame seeds, roasted
  • 2 tablespoons musturd seeds, roasted
  • 1 teaspoon cumin seeds
  • 1 tablespoon mango powder
  • 1 teapoon pepper corn
  • 1 teaspoon timur (szchwan pepper)
  • 2 tablespoons musturd oil
  • 2 tablespoons lemon juice
  • 1 teaspoon suger
  • 1/2 teaspoon asafoetida
  • Salt to taste

Instructions

    In a blender, combine all the ingredients into a paste with a desired texture. If desired hot and sour, increase the amount of lemon juice (using tamarind paste is a bit more authentic).
